Ingredients
  

Potatoes
  • 2 pounds Yukon Gold Potatoes Cut into bite-sized pieces
Dressing
  • 1/4 cup Olive Oil
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Honey
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Black Pepper Freshly ground
Add-ins
  • 1 cup Chopped Green Onions
  • 1/2 cup Cooked Bacon Crumble into pieces
  • 1/4 cup Fresh Parsley Chopped

Method
 

Prepare the Potatoes
  1. Place the potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. Drain the potatoes and let them cool slightly.
Make the Dressing
  1. In a mixing bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
Combine Ingredients
  1. Add the warm potatoes to the bowl with the dressing and toss gently to coat.
  2. Fold in the chopped green onions, crumbled bacon, and parsley.
Serve
  1. Serve the warm potato salad immediately, garnished with additional parsley if desired.
