Crust
  • 300 g digestives
  • 150 g unsalted butter melted
Filling
  • 250 g white chocolate melted and cooled
  • 500 g full fat cream cheese
  • 100 g icing sugar
  • 1 tsp vanilla extract
  • 300 ml double cream
  • 250 g fresh raspberries
Topping
  • 150 ml double cream for whipping
  • 2 tbsp icing sugar for whipped cream
  • 100 g white chocolate for drizzling
  • 12 pieces fresh raspberries for garnish
  • 10 g freeze dried raspberries for garnish

Method
 

Preparation
  1. Crush the digestives and mix with melted butter.
  2. Combine the melted white chocolate and cream cheese in a bowl.
  3. Add icing sugar and vanilla extract to the chocolate mixture, stirring until smooth.
  4. In a separate bowl, whip 300 ml double cream until soft peaks form, then fold into the cheesecake mixture.
  5. Gently fold in the fresh raspberries.
  6. Shape the mixture into balls and place them on a baking tray.
  7. Chill the balls in the refrigerator for at least 60 minutes.
  8. Melt the white chocolate for drizzling.
  9. Drizzle the melted chocolate over the chilled cheesecake balls.
  10. Top each ball with a fresh raspberry and a sprinkle of freeze dried raspberries.
