  • 2 cups cooked sushi rice cooled to room temperature
  • 1 can high-quality tuna 5 oz, drained
  • 1 ripe avocado mashed
  • 2 green onions chopped
  • 1 large egg beaten
  • 2 tbsp sriracha
  • 3 tbsp mayonnaise
  • 1 tbsp olive oil for cooking

Method
 

  1. Prepare your ingredients: Ensure the sushi rice is cooked and cooled to room temperature.
  2. In a large bowl, combine sushi rice, tuna, mashed avocado, green onions, and beaten egg. Mix gently until combined but still chunky.
  3. Form the mixture into patties approximately 1 inch thick using wet hands to prevent sticking.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook patties for about 3-4 minutes on each side until golden brown.
  5. For the sauce, mix mayonnaise and sriracha in a small bowl until smooth; adjust spice level as desired.
  6. Assemble the burgers: Place patties on toasted buns or lettuce wraps, top with sauce and additional avocado if desired.
