Ingredients
  

Beans
  • 1 can black beans rinsed and drained
  • 1 can kidney beans rinsed and drained
  • 1 can chickpeas rinsed and drained
Vegetables
  • 1 cup chopped bell pepper any color
  • 1 cup chopped red onion
  • 1 cup chopped celery
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup for vegan option
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Beans
  1. In a large mixing bowl, combine the black beans, kidney beans, and chickpeas.
Add Vegetables
  1. Add the chopped bell pepper, red onion, and celery to the bowl with the beans.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the bean and vegetable mixture and toss gently to combine. Serve immediately or refrigerate for an hour to let the flavors meld.
