Ingredients
  

  • 2 fillets salmon about 6 oz each
  • 1/4 cup teriyaki sauce
  • 1 cup sushi rice
  • 1 ripe avocado
  • 1 tablespoon sesame seeds
  • 2 green onions finely chopped

Method
 

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions (approximately 20 minutes) and let cool.
  2. Marinate salmon fillets in teriyaki sauce for 15-20 minutes.
  3. Preheat grill or pan to medium-high heat. Cook salmon skin-side down for about 6 minutes on each side until flaky.
  4. Slice avocado in half, remove the pit, scoop out the flesh, and slice thinly.
  5. Assemble by layering sushi rice as the base, followed by salmon slices and avocado.
  6. Drizzle with additional teriyaki sauce and garnish with sesame seeds and green onions.
