Ingredients
  

Salad Ingredients
  • 1 cup bulgur wheat fine or medium grind
  • 2 cups fresh parsley finely chopped
  • 1 cup tomatoes diced
  • 1/2 cup cucumber diced
  • 1/4 cup green onions sliced
  • 1/4 cup fresh mint finely chopped
Dressing
  • 1/4 cup olive oil
  • 1/4 cup lemon juice freshly squeezed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare Bulgur
  1. Soak the bulgur wheat in cold water for about 15 minutes until it softens. Drain any excess water.
Mix Salad
  1. In a large mixing bowl, combine the soaked bulgur, parsley, tomatoes, cucumber, green onions, and mint.
Make Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
Combine
  1. Pour the dressing over the salad and toss well to combine. Adjust seasoning if necessary.
Serve
  1. Chill in the refrigerator for 30 minutes before serving for the best flavor.
