Ingredients
  

Chicken and Rice
  • 2 cups cooked rice white or brown rice
  • 1 lb chicken breast boneless, skinless
  • 1 tablespoon olive oil for grilling chicken
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Street Corn Topping
  • 2 cups corn kernels fresh or frozen
  • 1 tablespoon mayonnaise for creaminess
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder for spice
  • 1/4 cup cotija cheese crumbled
  • 2 tablespoons cilantro chopped
Garnishes
  • 1 avocado sliced for topping
  • 1 lime wedges for serving

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper.
  2. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let rest.
Cook the Corn
  1. In a skillet over medium heat, add the corn kernels and cook until heated through, about 5 minutes.
  2. Stir in mayonnaise, lime juice, chili powder, and half of the cotija cheese. Mix well.
Assemble the Bowl
  1. Slice the grilled chicken and place it over a bed of cooked rice in each bowl.
  2. Top with the street corn mixture, remaining cotija cheese, and chopped cilantro.
  3. Garnish with avocado slices and lime wedges.
