Method
- Heat 1 tablespoon of olive oil in a large Dutch oven or heavy stockpot over medium-high heat. Add ground halal Italian beef sausage, breaking it up with a wooden spoon into bite-sized crumbles. Cook for 6 to 8 minutes until golden-brown and cooked through. Transfer with a slotted spoon to a plate, leaving the flavorful drippings in the pot.
- Lower heat to medium. Add diced onion, carrots, and celery to the pot. Sauté for 5 to 6 minutes until tender and fragrant. Stir in minced garlic and red pepper flakes, cooking for 1 minute until aromatic.
- Pour in beef broth and canned diced tomatoes with their juices, using your spoon to scrape up any browned fond from the bottom of the pot. Stir in Italian seasoning, rosemary sprig, salt, black pepper, and the parmesan cheese rind. Bring to a boil, then reduce heat to medium-low and simmer uncovered for 10 minutes.
- Take 1 cup of the drained cannellini beans and lightly mash them with a fork (or blend with a ladle of broth), then stir the mashed beans and remaining whole beans into the soup. This creates a natural, velvety body without excess heavy flour. Stir the browned sausage back into the pot along with the chopped Tuscan kale. Simmer for 5 minutes until kale is wilted and tender.
- Discard the rosemary sprig and parmesan rind. Lower heat to low and gently stir in heavy cream, freshly grated Parmigiano-Reggiano, and fresh lemon juice. Taste and adjust seasoning with additional salt and pepper if needed. Ladle into warm bowls and garnish with extra parmesan curls, cracked black pepper, and warm crusty garlic bread.
