Ingredients
  

Pesto Ingredients
  • 2 cups fresh basil leaves packed
  • 2 cloves garlic peeled
  • 1/4 cup pine nuts lightly toasted
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup extra virgin olive oil plus more if needed
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Making the Pesto
  1. In a food processor, combine the basil leaves, garlic, pine nuts, and Parmesan cheese. Pulse until finely chopped.
  2. With the processor running, slowly add the olive oil until the mixture is smooth and creamy.
  3. Scrape down the sides of the bowl as needed. Season with salt and pepper to taste.
  4. Transfer the pesto to a bowl or jar and use immediately or store in the refrigerator for up to a week.

For a nut-free version, substitute pine nuts with sunflower seeds.
