A refreshing and colorful pasta salad perfect for picnics and potlucks, loaded with vegetables and a tangy dressing.

Ingredients
  

Pasta
  • 8 oz pasta (fusilli or penne) cooked and cooled
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic minced
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Herbs
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
Mix the Ingredients
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, and black olives.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss to combine. Add chopped parsley and basil, and mix well. Serve chilled.

Notes
