Ingredients
  

Salad Base
  • 2 cups shredded green papaya peeled and julienned
  • 1 cup shredded carrots peeled and julienned
  • 1 cup cherry tomatoes halved
  • 1/2 cup green beans trimmed and cut into 1-inch pieces
Dressing
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon palm sugar or brown sugar
  • 1 clove garlic minced
  • 1 to taste Thai bird's eye chili smashed
Garnish
  • 2 tablespoons peanuts crushed
  • 1 tablespoon fresh cilantro chopped

Method
 

Prepare the Salad
  1. In a large bowl, combine the shredded green papaya, shredded carrots, cherry tomatoes, and green beans.
Make the Dressing
  1. In a mortar and pestle, combine the fish sauce, lime juice, palm sugar, minced garlic, and smashed chili. Grind until well mixed.
Combine and Serve
  1. Pour the dressing over the salad and toss well to combine. Garnish with crushed peanuts and chopped cilantro before serving.
