Method
- Preheat your oven to 400 F and lightly grease a standard size muffin tin.
- In a large bowl, combine cubed salmon, sea salt, soy sauce, and mayo. Toss to coat well.
- In another bowl, mix the cooked rice with rice vinegar until all the rice is coated.
- Prepare the nori sheets by cutting them into squares small enough to fit into each cavity of your muffin tin.
- Add about 2-3 tablespoons of rice mixture to each nori sheet, fold, and place inside the muffin tin. Repeat until all cavities are filled.
- Top each nori cup with about 2 tablespoons of the salmon mixture.
- Bake the cups for 15 minutes, or until the salmon is cooked to your liking.
- Once done, remove from the oven, top with garnishes of choice, serve, and enjoy.
