Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup buttermilk
  • 1 large egg beaten
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the wet ingredients: buttermilk, beaten egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.
Cook the Pancakes
  1. Heat a griddle or frying pan over medium heat and lightly grease it with butter or oil.
  2. Pour about 1/4 cup of batter onto the griddle for each pancake.
  3. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  4. Flip the pancakes and cook for another 1-2 minutes until golden brown.
  5. Repeat with the remaining batter, greasing the griddle as needed.
Serve
  1. Serve warm with your favorite toppings such as syrup, fresh fruit, or whipped cream.
