Meat and Base
  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 cups low-sodium beef broth
  • 1 cup dry red wine
Vegetables
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
Herbs and Spices
  • 2 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Cooking Steps
  1. Prepare your ingredients by dicing the beef and chopping the vegetables.
  2. Season the beef with salt and pepper. In a large pot over medium-high heat, add olive oil and sear the beef until browned on all sides. Remove and set aside.
  3. In the same pot, sauté onions until translucent (about 5 minutes).
  4. Return the beef to the pot along with carrots and potatoes. Pour in beef broth and red wine, scraping up any flavorful bits from the bottom.
  5. Add thyme and bay leaves; bring to a boil then reduce heat to low. Cover and simmer for at least 2 hours or until meat is tender.
  6. Remove bay leaves before serving.
