- Prepare your ingredients by dicing the beef and chopping the vegetables.
- Season the beef with salt and pepper. In a large pot over medium-high heat, add olive oil and sear the beef until browned on all sides. Remove and set aside.
- In the same pot, sauté onions until translucent (about 5 minutes).
- Return the beef to the pot along with carrots and potatoes. Pour in beef broth and red wine, scraping up any flavorful bits from the bottom.
- Add thyme and bay leaves; bring to a boil then reduce heat to low. Cover and simmer for at least 2 hours or until meat is tender.
- Remove bay leaves before serving.
