Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken breasts cut into strips
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Taco Assembly
  • 8 small corn tortillas warmed
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup sour cream
  • 1/4 cup fresh cilantro chopped

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lime juice, cumin, chili powder, garlic powder, salt, and black pepper. Add the chicken strips and toss to coat. Let marinate for at least 15 minutes.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Grill the marinated chicken strips for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
Assemble the Tacos
  1. Remove the chicken from the grill and let it rest for a few minutes. Slice the chicken into bite-sized pieces. Place the chicken in warmed tortillas and top with lettuce, tomatoes, cheese, sour cream, and cilantro.
