Ingredients
  

Chicken Marinade
  • 1 pound boneless, skinless chicken breasts cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
Vegetables (optional)
  • 1 bell pepper cut into chunks any color
  • 1 zucchini sliced
  • 1 red onion cut into chunks

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, soy sauce, lemon juice, garlic powder, paprika, salt, black pepper, and oregano.
  2. Add the chicken cubes to the marinade and mix well to coat. Cover and refrigerate for at least 30 minutes.
Assemble the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Thread the marinated chicken and optional vegetables onto the skewers, alternating between chicken and vegetables.
Grill the Skewers
  1. Preheat the grill to medium-high heat.
  2. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the skewers from the grill and let them rest for a few minutes before serving.
  2. Serve with your favorite dipping sauce or side dishes.
