Ingredients
  

Vegetables
  • 1 bunch garlic scapes trimmed and cut into 2-inch pieces
  • 1 cup bell pepper sliced
  • 1 cup carrots sliced
  • 1 cup broccoli florets
Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger grated
  • 1 teaspoon garlic minced
Protein (optional)
  • 1 cup tofu cubed

Method
 

Prepare the Ingredients
  1. Trim the garlic scapes and cut them into 2-inch pieces. Slice the bell pepper and carrots, and separate the broccoli into florets.
Make the Sauce
  1. In a small bowl, mix together the soy sauce, sesame oil, grated ginger, and minced garlic.
Stir-Fry the Vegetables
  1. Heat a wok over medium-high heat. Add a splash of oil and stir-fry the garlic scapes, bell pepper, carrots, and broccoli for about 5-7 minutes until tender-crisp.
Add Protein and Sauce
  1. If using tofu, add it to the wok and stir-fry for another 3 minutes. Pour the sauce over the vegetables and tofu, stirring to coat evenly. Cook for an additional 2 minutes.
Serve
  1. Remove from heat and serve hot, optionally over rice or noodles.
