Ingredients
  

Pie Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup ice water more if needed
Filling
  • 4 cups fresh strawberries hulled and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
Topping
  • 1 cup whipped cream for serving

Method
 

Prepare the Pie Crust
  1. In a mixing bowl, combine flour, sugar, and butter. Mix until crumbly.
  2. Add ice water gradually until the dough holds together. Roll out and fit into the pie dish.
  3. Preheat the oven to 350°F (175°C) and bake the crust for 10 minutes until lightly golden. Let cool.
Prepare the Filling
  1. In a saucepan, combine sliced strawberries, sugar, cornstarch, and lemon juice.
  2. Cook over medium heat until the mixture thickens and bubbles, about 5-7 minutes.
  3. Pour the filling into the cooled pie crust and let it set in the refrigerator for at least 2 hours.
Serve
  1. Slice the pie and serve with whipped cream on top.
