Edamame Salad

A refreshing and nutritious salad made with edamame, fresh vegetables, and a light dressing.

Ingredients
  

Salad Base
  • 2 cups edamame (shelled) fresh or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon honey or agave syrup
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Edamame
  1. Bring a pot of water to a boil. Add the edamame and cook for 3-5 minutes until tender. Drain and rinse under cold water.
Mix the Salad
  1. In a mixing bowl, combine the cooked edamame, cherry tomatoes, cucumber, red onion, and cilantro.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, rice vinegar, soy sauce, honey, minced garlic, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill in the refrigerator for 30 minutes before serving.
