Easy Spanish Rice

Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups chicken broth or vegetable broth for a vegetarian option
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can diced tomatoes 14.5 oz, drained
  • 1 cup frozen peas optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Cooking the Rice
  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic, cumin, and paprika. Stir for about 1 minute until fragrant.
  3. Add the rice to the saucepan and stir to coat the rice with the oil and spices.
  4. Pour in the chicken broth and add the diced tomatoes, salt, and pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  6. If using, stir in the frozen peas during the last 5 minutes of cooking.
  7. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
