  • 1 lb lean ground turkey
  • 1 cup uncooked rice
  • 1 cup bell peppers chopped, mixed colors
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cups low-sodium chicken broth
  • 1 cup canned tomato sauce
  • salt to taste
  • pepper to taste
  • optional spices Italian seasoning, cumin, or paprika

Method
 

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a large skillet over medium heat, add olive oil; sauté onions and garlic until softened.
  3. Add ground turkey, breaking it up as it cooks until no longer pink (about 5 minutes).
  4. Stir in chopped bell peppers and any additional veggies; cook for another 5 minutes.
  5. Combine cooked rice, chicken broth, tomato sauce, salt, pepper, and desired spices; mix well.
  6. Transfer the mixture into the prepared baking dish; spread evenly.
  7. Bake for 30-35 minutes until bubbly.
