Method
Prepare the Filling
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine the blueberries, 1/2 cup of sugar, lemon juice, and cornstarch. Mix well and set aside.
Make the Topping
- In another bowl, whisk together the flour, baking powder, and salt. In a separate bowl, mix the milk, melted butter, and egg. Combine the wet and dry ingredients until just mixed.
Assemble and Bake
- Pour the blueberry mixture into a greased baking dish. Spoon the topping over the blueberries. Sprinkle the remaining 1/2 cup of sugar on top.
- Bake in the preheated oven for 30 minutes or until the topping is golden brown and the blueberries are bubbly.
Serve
- Let the cobbler cool slightly before serving. Enjoy warm, optionally with a scoop of vanilla ice cream.
