Ingredients
  

  • 2 cups elbow macaroni
  • 3 tablespoons butter unsalted
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • Salt to taste
  • Pepper to taste

Method
 

  1. Cook elbow macaroni in salted water until al dente, then drain and set aside.
  2. In a saucepan, melt butter over low heat; whisk in flour to create a roux. Gradually add milk, stirring until thickened. Remove from heat and mix in cheese until melted.
  3. In a bowl, combine cooked macaroni with cheese sauce. Add beaten eggs, salt, and pepper; mix well.
  4. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  5. Form small balls from the mixture and roll them in panko breadcrumbs before placing on the baking sheet.
  6. Bake for 20-25 minutes or until golden brown.
