Strawberry Buttercream
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1/4 cup fresh strawberries pureed
  • 1 teaspoon vanilla extract

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the almond milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 15 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cupcakes to cool completely before frosting.
  8. In a mixing bowl, beat the softened butter until creamy.
  9. Gradually add the powdered sugar and beat until well combined.
  10. Add the pureed strawberries and vanilla extract, then beat until fluffy.
  11. Frost the cooled cupcakes with the strawberry buttercream.
