Step-by-Step Baking Instructions
- Prep Ramekins & Preheat: Preheat your oven to 425°F (220°C). Generously grease four 6-ounce ceramic ramekins with softened butter, then coat the interiors completely with unsweetened cocoa powder, tapping out any excess (this prevents sticking while creating a clean chocolate crust). Arrange ramekins on a sturdy metal baking sheet.
- Melt Chocolate & Butter: Combine chopped bittersweet dark chocolate and cubed unsalted butter in a heatproof bowl set over a saucepan of barely simmering water (double boiler). Stir gently until smooth, glossy, and fully melted. Remove from heat and allow to cool for 3 to 4 minutes.
- Whisk Eggs & Sugar: In a separate medium mixing bowl, whisk together the whole eggs, egg yolks, granulated sugar, vanilla extract, and fine sea salt for 1 to 2 minutes until slightly thickened and pale yellow.
- Combine & Fold in Flour: Pour the warm melted chocolate mixture into the egg mixture, whisking gently until thoroughly incorporated and satiny. Sift in the flour and cocoa powder, then fold with a silicone spatula just until no dry flour pockets remain (do not overmix).
- Bake to Molten Perfection: Divide the batter evenly among the four prepared ramekins (filling each about 3/4 full). Bake at 425°F (220°C) for exactly 12 to 14 minutes, until the cake edges and tops are puffed and matte, but the centers still jiggle delicately when the baking sheet is gently nudged.
- Invert, Garnish & Feast: Remove from oven and let rest for 1 to 2 minutes. Run a thin butter knife gently around the top rim of each ramekin. Place an inverted dessert plate over each ramekin, carefully flip over, and let sit inverted for 10 seconds before lifting off the ramekin. Dust with powdered sugar, top with a cold scoop of vanilla ice cream and fresh berries, and plunge your spoon into the warm molten core!
