Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Crumble Topping
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 teaspoon cinnamon

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined.
Make the Crumble Topping
  1. In a separate bowl, combine the flour, sugar, and cinnamon for the crumble topping.
  2. Add the cold, cubed butter and mix with a fork or your fingers until the mixture resembles coarse crumbs.
Bake
  1. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  2. Sprinkle the crumble topping generously over each cookie.
  3. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  4. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
