  • 1 cup shredded sharp cheddar cheese
  • ½ cup cooked bacon bits
  • ½ cup sour cream
  • 2 tablespoons chopped fresh chives

Cooking Steps
  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes under cold water.
  2. Bake the potatoes directly on the oven rack for 45-60 minutes until tender. Let cool slightly.
  3. Slice each potato in half lengthwise and scoop out most of the flesh, leaving enough for structure.
  4. Brush the insides with olive oil and season with salt and pepper. Place skin side up on a baking sheet and bake for an additional 10-15 minutes until crispy.
  5. Load each skin with cheddar cheese and bacon bits. Return to the oven for another 5-10 minutes until bubbly and golden.
  6. Top with sour cream and chives before serving.
