Ingredients

Hearty Dry Base & Spices
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp sea salt
  • 1/2 cup pecans chopped and toasted
  • 2 tbsp pumpkin seeds
Creamy Pumpkin Custard Base
  • 1 cup pumpkin puree
  • 1 3/4 cups almond milk
  • 2 large eggs
  • 1/3 cup maple syrup
  • 2 tbsp coconut oil
  • 1 1/2 tsp vanilla extract

Method

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch or 9x9-inch ceramic baking dish with cooking spray or butter.
  1. In a large bowl, stir together the rolled oats, baking powder, ground cinnamon, pumpkin pie spice, sea salt, and half of the chopped pecans.
  1. In a separate medium bowl, whisk together the pumpkin puree, almond milk, beaten eggs, pure maple syrup, melted coconut oil, and vanilla extract until completely smooth and creamy.
  1. Pour the dry oat mixture evenly into the prepared baking dish. Slowly pour the pumpkin custard liquid over the oats, gently pressing the oats down with a spatula so they are fully submerged. Scatter the remaining pecans and pepitas across the top.
  1. Bake in the preheated oven for 35 to 40 minutes, until the center is set and the top is lightly golden and toasted around the edges.
  1. Let cool for 10 minutes before slicing into squares. Serve warm with an extra drizzle of pure maple syrup, a dollop of Greek yogurt or mascarpone, and a dusting of cinnamon!
