Ingredients
  

Pasta
  • 8 oz chickpea pasta cooked according to package instructions
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1 cup bell pepper diced
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp garlic minced
  • 1 tsp dijon mustard
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Pasta
  1. Cook the chickpea pasta according to package instructions. Drain and let cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked chickpea pasta, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, lemon juice, garlic, dijon mustard, salt, and black pepper.
Combine
  1. Pour the dressing over the salad and toss until well combined. Adjust seasoning if necessary.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
