Ingredients

  • 2 cups fresh cherries, pitted and halved
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter, softened (1 ½ sticks)
  • 4 large eggs
  • 2 tsp almond extract
  • 1 cup powdered sugar

Equipment

  • Bundt pan

Method

  1. Preheat your oven to 350°F (175°C). Grease a bundt pan with butter or nonstick spray.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in almond extract.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed. Gently fold in the cherries.
  5. Pour the batter into the prepared bundt pan and smooth the top. Bake for 45-50 minutes or until a toothpick inserted comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack. Prepare the glaze by mixing powdered sugar with enough water or milk to reach desired consistency; drizzle over the cooled cake.

For extra flavor, consider adding a splash of vanilla extract or incorporating finely chopped nuts. You can use frozen cherries; just thaw and drain them thoroughly before adding to the batter.
