Ingredients
  

Salad Ingredients
  • 4 medium carrots peeled and sliced into ribbons
  • 1 cup fresh parsley chopped
  • 1 cup fresh mint chopped
  • 1 medium red bell pepper thinly sliced
  • 1 cup cucumber thinly sliced
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Vegetables
  1. Using a vegetable peeler, slice the carrots into long ribbons.
  2. In a large mixing bowl, combine the carrot ribbons, parsley, mint, red bell pepper, and cucumber.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to coat all the ingredients.
  2. Serve immediately or refrigerate for 15 minutes to allow flavors to meld.
