  • 4 tbsp cold unsalted butter, cubed
  • 1 pinch fine sea salt
Spiced Muffin Batter & Fresh Apples
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large large eggs
  • 3/4 cup buttermilk
  • 2 tsp pure vanilla extract
  • 1 3/4 cups fresh apples, peeled and diced
  • 1 tbsp flour for tossing apples
Optional Vanilla Glaze Drizzle
  • 1/2 cup powdered sugar
  • 1 tbsp heavy cream
  • 1/4 tsp pure vanilla extract

Method

Step-by-Step Baking Instructions
  1. Preheat Oven & Prepare Pan: Preheat your oven to 425°F (220°C). Line a standard 12-cup muffin tin with paper tulip baking liners or spray generously with non-stick baking spray.
  2. Make the Cinnamon Streusel: In a medium bowl, whisk together 1/2 cup flour, 1/2 cup dark brown sugar, cinnamon, and a pinch of salt. Add the cold cubed butter and cut in using a pastry cutter, fork, or fingertips until the mixture resembles coarse, pebbly crumbs. Place the bowl in the refrigerator while preparing the batter to keep the butter cold and crisp.
  3. Toss the Fresh Apples: In a small bowl, toss the peeled, finely diced apples with 1 tablespoon of flour and 1/4 teaspoon cinnamon. (This light flour coating prevents the apple chunks from sinking to the bottom of the muffin cups).
  4. Mix Dry Ingredients: In a large mixing bowl, whisk together the 2 cups flour, baking powder, baking soda, salt, cinnamon, and nutmeg until thoroughly aerated and combined.
  5. Whisk Wet Ingredients: In a separate medium bowl, whisk melted butter, granulated sugar, and light brown sugar until glossy. Whisk in the eggs one at a time, followed by buttermilk and pure vanilla extract until smooth and creamy.
  6. Combine & Fold: Pour the wet ingredients into the dry ingredients. Using a rubber spatula, fold gently just until barely combined (do not overmix; a few flour streaks are fine). Gently fold in the floured diced apples until evenly distributed.
  7. Fill Muffin Cups & Pile Streusel: Divide the batter evenly among the 12 muffin cups, filling them all the way to the top of the tin. Generously pile the chilled streusel crumble on top of each muffin, pressing down gently so the crumble adheres to the batter.
  8. The Two-Temperature Bake: Place the muffin tin on the center rack and bake at 425°F (220°C) for 5 minutes (this initial high heat blast triggers rapid leavening for sky-high bakery domes). Keeping the oven door closed, reduce temperature to 350°F (175°C) and bake for an additional 15 to 18 minutes, or until muffin tops are golden and a toothpick inserted into the center comes out clean.
  9. Cool & Glaze: Allow muffins to cool in the pan for 5 minutes, then transfer to a wire cooling rack. Whisk powdered sugar, cream, and vanilla together, then drizzle over warm muffins. Serve warm and enjoy!
