Ingredients
  

Fish and Greens
  • 4 fillets salmon (6 oz each) skin-side down
  • 4 cups fresh spinach
Seasoning
  • 2 tbsp olive oil for drizzling
  • 2 tbsp freshly squeezed lemon juice
  • 3 cloves garlic minced
  • 1 tsp dried thyme or dill to taste
  • salt to taste
  • pepper to taste

Method
 

Cooking Steps
  1. Preheat oven to 400°F (200°C). Line a baking dish with parchment paper.
  2. Place salmon fillets skin-side down in the dish. Drizzle with olive oil and sprinkle with salt, pepper, minced garlic, and herbs.
  3. In a bowl, toss fresh spinach with lemon juice and a bit of olive oil; spread it around the salmon.
  4. Bake for 15-20 minutes until the salmon flakes easily and reaches an internal temperature of 145°F (63°C).
  5. Allow to rest for a few minutes before serving; optionally drizzle with extra lemon juice.
