Ingredients
  

Fruits
  • 2 cups fresh apricots pitted and chopped
Sugar
  • 1 cup granulated sugar
Acid
  • 2 tablespoons lemon juice freshly squeezed
Pectin
  • 1 package fruit pectin follow package instructions

Method
 

Prepare the Apricots
  1. Wash the apricots, remove the pits, and chop them into small pieces.
Cook the Jam
  1. In a large pot, combine the chopped apricots, sugar, and lemon juice. Stir well.
  2. Bring the mixture to a boil over medium heat, stirring frequently.
  3. Once boiling, add the fruit pectin and continue to boil for 1-2 minutes, stirring constantly.
  4. Check the consistency using a thermometer; it should reach 220°F (104°C).
Jar the Jam
  1. Remove the pot from heat and ladle the hot jam into sterilized canning jars, leaving about 1/4 inch headspace.
  2. Seal the jars with lids and process in a boiling water bath for 5-10 minutes.
